Rig and Sails

Auxilary power, accomodations, calculations.

The theoretical maximum speed that a displacement hull can move efficiently through the water is determined by it's waterline length and displacement. It may be unable to reach this speed if the boat is underpowered or heavily loaded, though it may exceed this speed given enough power. Read more.

Classic hull speed formula:

Hull Speed = 1.34 x √LWL

Max Speed/Length ratio = 8.26 ÷ Displacement/Length ratio .311 Hull Speed = Max Speed/Length ratio x √LWL

Sail Area / Displacement Ratio

A measure of the power of the sails relative to the weight of the boat. The higher the number, the higher the performance, but the harder the boat will be to handle. This ratio is a "non-dimensional" value that facilitates comparisons between boats of different types and sizes. Read more.

SA/D = SA ÷ (D ÷ 64) 2/3

  • SA : Sail area in square feet, derived by adding the mainsail area to 100% of the foretriangle area (the lateral area above the deck between the mast and the forestay).
  • D : Displacement in pounds.

Ballast / Displacement Ratio

A measure of the stability of a boat's hull that suggests how well a monohull will stand up to its sails. The ballast displacement ratio indicates how much of the weight of a boat is placed for maximum stability against capsizing and is an indicator of stiffness and resistance to capsize.

Ballast / Displacement * 100

Displacement / Length Ratio

A measure of the weight of the boat relative to it's length at the waterline. The higher a boat’s D/L ratio, the more easily it will carry a load and the more comfortable its motion will be. The lower a boat's ratio is, the less power it takes to drive the boat to its nominal hull speed or beyond. Read more.

D/L = (D ÷ 2240) ÷ (0.01 x LWL)³

  • D: Displacement of the boat in pounds.
  • LWL: Waterline length in feet

Comfort Ratio

This ratio assess how quickly and abruptly a boat’s hull reacts to waves in a significant seaway, these being the elements of a boat’s motion most likely to cause seasickness. Read more.

Comfort ratio = D ÷ (.65 x (.7 LWL + .3 LOA) x Beam 1.33 )

  • D: Displacement of the boat in pounds
  • LOA: Length overall in feet
  • Beam: Width of boat at the widest point in feet

Capsize Screening Formula

This formula attempts to indicate whether a given boat might be too wide and light to readily right itself after being overturned in extreme conditions. Read more.

CSV = Beam ÷ ³√(D / 64)

Volvo or BMW aux. were available as options. Early boats had lead ballast.

Jock Whitney’s Iconic Aphrodite Now Queen of Watch Hill, RI

' src=

Once the pride of the Gold Coast commuter boats that whisked financiers from their Long Island homes to their Wall Street offices in the 1930s, Aphrodite , one of the most easily recognized boats on the water, is now the pride of Watch Hill, Rhode Island, having been totally restored back to her former glory.

Even in its original incarnation, Aphrodite was never just another pretty commuter boat. It was commissioned by John Hay “Jock” Whitney in 1937 from the Purdy Boat Company in Port Washington, on the north shore of Long Island. Whitney lived in Manhasset, across the bay from Port Washington, and took his 72-foot commuter boat from his waterfront mansion there to his Wall Street office during the spring and summer. The problem was that Whitney’s brother-in-law, Charles Payson, had a faster commuter boat, and was passing Whitney on Long Island Sound.

Purdy built Aphrodite to go fast, with twin 1,500-hp Packard airplane engines. They pushed the 74-foot boat to a top speed of 38 knots, faster than Payson’s boat and any other commuter boat on the Sound, although it did burn 300 gallons of aviation fuel an hour. It also was arguably the prettiest commuter boat on the water, with its signature torpedo stern, long, low, black profile and gleaming mahogany.

During the Second World War, Whitney gave the boat to the Navy, which used it to carry dignitaries (including President Roosevelt) up and down the East Coast. After the war, when Whitney was the publisher of The New York Herald Tribune , he sent Aphrodite every morning from his then summer home on Fishers Island to New London to pick up the morning papers. He also entertained on the boat, with a guest list running from Fred Astaire and Spencer Tracy to Shirley Temple. But in the ‘60s Whitney donated the boat to charity, and it eventually went through several owners and various states of disrepair.

In 2003, Chuck Royce, of Royce Mutual Funds, found Aphrodite languishing in Florida and brought it up to the Brooklin Boatyard in Maine for a total, two-year restoration. The boat now is moored in Watch Hill, near the Ocean House hotel and resort there, which Royce also restored.

Aphrodite 25 with a Lombardini engine for 4,600 euro!

Friends, today we have an Aphrodite 25 with a Lombardini engine for 4,600 euro!

Location: Norway

Length: 7.60 meters Width: 2.85 meters Draft: 1.50 meters Sleeps: 5 Kitchen (galley): available Toilet: available

There is very little information about the boat in the ad, but judging by the photo, the boat is clean and well-maintained. The interior and the cushions in the cabin are in good condition. The width of the boat is 2.85 meters, which is quite a lot for a 25-feet boat.

The galley is equipped with a 2-burner stove and a sink with fresh and seawater.

A full set of sails: a staysail on a furling and a mainsail with a cover. The sails are in good condition. The photo shows a spinnaker boom, which means there may also be a spinnaker.

There is a sprayhood in the cockpit, a swim platform is installed at the stern, the entrance panel has been replaced with a glass one.

The boat is equipped with a Lombardini diesel engine. The ad does not say about its condition, but judging by the photo, the engine is clean and fairly new.

How do you like this boat? Write your opinion.

The photos show that the boat was kept well. If it doesn’t have any serious problems requiring large investments, then I think this is quite an interesting offer.

Brooklin Boat Yard

Aphrodite 2005

Having blown one of her two gasoline engines within sight of Brooklin Boat Yard after the long, slow run from Florida, and having her hull crack like an egg while in the Travelift slings next day, it was clear the Aphrodite’s time had come for a complete restoration. She was a treasure, widely known and well worth preserving. Here’s a brief rundown:

Aphrodite was built by the Purdy Boat Company, Port Washington, NY, and launched in May of 1937 for Wall Street financier and later Ambassador to the Court of St. James, John Hay (Jock) Whitney of Manhasset, Long Island.

Best described as a “Commuter Yacht”, this elegant and sleek 74-footer would each morning whisk Mr. Whitney from his large two-story boat house westward down Long Island Sound and the East River to his Wall Street office. During the 45-minute commute Mr. Whitney would go up to the forward cockpit and read the Herald Tribune to catch up on the day’s news.

Aphrodite ’s guest list over the years reads like a “Who’s Who” in the worlds of government, business, and entertainment with such luminaries as Fred Astaire, Sir Laurence Olivier, Spencer Tracy, Katherine Hepburn, Henry Ford II, FDR advisor Harry Hopkins and Nelson Rockefeller aboard for summer day cruises. Aphrodite also once hosted a birthday party for Shirley Temple.

The day after the attack on Pearl Harbor, Mr. Whitney offered Aphrodite to the government for war service, and she was commissioned in April 1942 as a Coast Guard auxiliary vessel (CGR-557). The boat spent most of its war-time career ferrying dignitaries up and down the Atlantic coast and transporting President Roosevelt to and from his home at Hyde Park on the Hudson River.

In the early 1960’s Mr. Whitney no longer needed a boat of Aphrodite ’s size and so donated the boat to Anthony Drexel Duke and Boy’s Harbor, a summer program for disadvantaged inner-city youth which operated on Mr. Duke’s estate at East Hampton, Long Island.

In the late 1960’s or early 1970’s Aphrodite was renamed Moonfire and under this name she went through a series of owners as her condition deteriorated to the point where she was parked ashore with weeds sprouting around her neglected hull.

Around 1977 Mr. John Pannell started a marine repair business (Harbor View Marine) on the site of the old Purdy Boat Company where Aphrodite was originally built. In 1983 Mr. Pannell was approached by a gentleman from New Jersey who told him he had just bought an old boat, would he be interested in a restoration project and added “she’s got Moonfire on the transom but I think she’s Aphrodite. ” The boat was launched and towed back to her original birthplace where she was then hauled, and restoration begun.

The unexpected death that owner brought the restoration to a halt, but work began again in earnest when John Pannell accepted ownership from the heirs as payment for work done to date.

After relaunching in 1984, Aphrodite traveled up and down the East Coast and attended many classic boat events and garnered many a prize.

In the fall of 2000 John Pannell sold Aphrodite to her present owner, a true classic boat enthusiast. In the late fall of 2003 Aphrodite was delivered to Brooklin Boat Yard for a complete restoration and to bring her systems up to today’s standards.

Aphrodite ’s Rebirth

The “ Aphrodite ” went through complete restoration using the original boat as a template from which to create what would become the reborn “ Aphrodite ”.

The first stage of this project was to extensively catalog all aspects of the boat for later reference. Once this historical documentation was completed, molds were placed into the boat to retain her hull shape. Next the job of disassembly began in earnest with the removal of the deck, superstructure, bulkheads, all interior accommodations and ship’s systems leaving only the hull in place.

Reconstruction began with the replacement of the original backbone, stem, floors and the reframing of the intricate curves of “ Aphrodite’s ” signature torpedo stern. Next on the list was the removal of the original hull planking and the fastening of temporary ribbands to the original frames. After all planking was removed, new white oak frames were fabricated and steam bent into position, gradually replacing the originals.

On September 2, 2004 the final original frame (last original wood in the boat) was removed marking the transition from old to new.

Once the all important structural framing work was completed the hull was then re-planked as originally built with two layers of Philippine mahogany, copper-riveted. With basic hull restoration complete, the work of engine and systems installation went forward along with the reconstruction of the interior accommodations, a new deck, and the crafting of Aphrodite’s distinctive cabin and superstructure.

Launching Aphrodite

On a crisp clear October day in 2005, with a huge crowd made up of Aphrodite’s owners, the crew of Brooklin Boat Yard, and families, friends, and neighbors on hand to wish her well, Aphrodite slipped into the waters of Center Harbor to begin a new life based in Watch Hill, Rhode Island.

Summary Analysis of the Design Ratios for the  Aphrodite 101

eBook: How to Avoid Buying the Wrong Sailboat

1. A Sail Area/Displacement Ratio of 20.8 suggests that, in the right hands, the Aphrodite 101 will have enough performance to leave most other sailboats of similar waterline length well astern.

2. A Ballast/Displacement Ratio of 57.0 means that the Aphrodite 101 will stand up well to her canvas in a blow, helping her to power through the waves.

3. A Displacement/Length Ratio of 152, tells us the Aphrodite 101 is clearly a light displacement sailboat. If she's loaded with too much heavy cruising gear her performance will suffer dramatically.

4. Ted Brewer's Comfort Ratio of 21.6 suggests that crew comfort of a Aphrodite 101 in a seaway is similar to what you would associate with the motion of a coastal cruiser with moderate stability, which is not encouraging news for anyone prone to seasickness.

5. The Capsize Screening Formula (CSF) of 1.7 tells us that a Aphrodite 101 would be a safer choice of sailboat for an ocean passage than one with a CSF of more than 2.0.

More about the Aphrodite 101...

The Aphrodite 101 is a 9.9-meter (32.5-foot) monohull sailboat that combines performance, beauty, and simplicity. It is a fractional sloop with a single-spreader mast and a large mainsail. The boat has a fin keel with a spade rudder, and can be steered by a tiller or a wheel. The boat has a displacement of 2.8 tons and a ballast of 1.2 tons, giving it a good stability and responsiveness. The boat can reach speeds of up to 7 knots in light winds and up to 12 knots in strong winds.

The Aphrodite 101 was originally built by Bianca Yachts in Denmark, but later production was taken over by Copland Boats in Sweden and Ott Yacht in Germany. Nearly 500 boats have been built to date, with over 140 sailing on Lake Constance in Germany.

The Aphrodite 101 is ideal for recreational sailors who enjoy racing, cruising, or day sailing. The boat is easy to handle, even single-handedly, and can cope with various weather conditions. The boat is also suitable for family sailing, as it has enough space and comfort for four people to sleep on board.

Accommodation The Aphrodite 101 has a simple but functional interior layout that maximizes the use of space. The boat has four berths: two in the forepeak cabin and two in the saloon. The saloon also has a folding table that can seat four people for dining or socializing. The galley is located on the port side of the saloon, and has a sink, a stove, and some storage space. The navigation station is located on the starboard side of the saloon, and has a chart table, an instrument panel, and some drawers. The head is located aft of the navigation station, and has a toilet, a sink, and some lockers.

The Aphrodite 101 does not have any other versions or options for the accommodation layout. However, some owners have customized their boats by adding or removing bulkheads, cabinets, or cushions to suit their preferences.

Hull and Deck The Aphrodite 101 has a sleek and graceful hull shape that gives it an attractive appearance and a good performance. The hull is made of fiberglass reinforced plastic (FRP), which is strong, light, and durable. The hull has a white gelcoat finish with blue stripes along the waterline and the sheerline.

The deck of the Aphrodite 101 is also made of FRP with a non-slip surface. The deck has a large cockpit that can accommodate up to six people comfortably. The cockpit has two lockers for storing sails, lines, or other equipment. The cockpit also has an outboard motor bracket on the transom for mounting an auxiliary engine.

The mast of the Aphrodite 101 is deck-stepped and made of aluminum alloy. The mast has one set of swept-back spreaders that support the shrouds and the forestay. The mast also has internal halyards that run through exit boxes on the mast base.

Review of Aphrodite 25

Basic specs..

The hull is made of fibreglass. Generally, a hull made of fibreglass requires only a minimum of maintenance during the sailing season. And outside the sailing season, just bottom cleaning and perhaps anti-fouling painting once a year - a few hours of work, that's all.

The boat equipped with a fractional rig. A fractional rig has smaller headsails which make tacking easier, which is an advantage for cruisers and racers, of course. The downside is that having the wind from behind often requires a genaker or a spinnaker for optimal speed.

The Aphrodite 25 has been built with different keel alternatives.

Unknown keel type

The keel is made of iron. Many people prefer lead keel in favour of iron. The main argument is that lead is much heavier than iron and a lead keel can therefore be made smaller which again result in less wet surface, i.e. less drag. In fact iron is quite heavy, just 30% less heavy than lead, so the advantage of a lead keel is often overstated.

The boat can enter most marinas as the draft is just about 1.50 - 1.60 meter (4.92 - 5.22 ft) dependent on the load. See immersion rate below.

This keel is also made of iron.

The boat can enter most marinas as the draft is just about 1.55 - 1.65 meter (5.09 - 5.39 ft) dependent on the load. See immersion rate below.

Aphrodite 25 may be equipped with an inboard Volvo Penta MD5 diesel engine at 7 hp (5 kW). Calculated max speed is about 4.3 knots

Sailing characteristics

This section covers widely used rules of thumb to describe the sailing characteristics. Please note that even though the calculations are correct, the interpretation of the results might not be valid for extreme boats.

What is Capsize Screening Formula (CSF)?

The capsize screening value for Aphrodite 25 is 2.26, indicating that this boat would not be accepted to participate in ocean races.

What is Theoretical Maximum Hull Speed?

The theoretical maximal speed of a displacement boat of this length is 6.2 knots. The term "Theoretical Maximum Hull Speed" is widely used even though a boat can sail faster. The term shall be interpreted as above the theoretical speed a great additional power is necessary for a small gain in speed.

The immersion rate is defined as the weight required to sink the boat a certain level. The immersion rate for Aphrodite 25 is about 126 kg/cm, alternatively 705 lbs/inch. Divers recover 5 bodies from wrecked superyacht off Sicily; 1 still missing

aphrodite 25 sailboat

APTOPIX Italy Boaters Missing Italian firefighter scuba divers bring ashore, in the green bag, the body of one of the victims from the British-flagged vessel Bayesian, Wednesday, Aug. 21, 2024. The yacht was hit by a violent sudden storm and sank early Monday, while at anchor off the Sicilian village of Porticello near Palermo, in southern Italy. (AP Photo/Salvatore Cavalli) (Salvatore Cavalli/AP)

PORTICELLO, Sicily — (AP) — Divers searching the wreck of a superyacht that sank off Sicily found the bodies of five passengers Wednesday, leaving one still missing as questions intensified about why the vessel sank so quickly when a nearby sailboat remained largely unscathed.

Rescue crews brought four body bags ashore at Porticello. Salvatore Cocina, head of the Sicily civil protection agency, said a fifth body had been located. Divers on-scene said they would try to recover it on Thursday while continuing the search for the sixth.

The discovery made clear the operation to search the hull on the seabed 50 meters (164 feet) underwater had quickly turned into a recovery one, not a rescue, given the amount of time that had passed and with no signs of life over three days of searching.

The Bayesian, a 56-meter (184-foot) British-flagged yacht, went down in a storm early Monday as it was moored about a kilometer (a half-mile) offshore. Civil protection officials said they believed the ship was struck by a tornado over the water, known as a waterspout.

Fifteen people escaped in a lifeboat and were rescued by a nearby sailboat. The body of the ship's chef, Recaldo Thomas of Antigua, was recovered Monday.

Thomas was born in Canada, according to his cousin David Isaac, but visited his parents’ homeland of Antigua as a child, and moved permanently to the tiny eastern Caribbean island in his early 20s. Italian officials previously listed Antigua and Canada as the nationality of people on board.

The fate of six missing passengers had driven the search effort, including British tech magnate Mike Lynch , his 18-year-old daughter and associates who had successfully defended him in a recent U.S. federal fraud trial.

Lynch’s spokesperson did not respond to a request for comment Wednesday.

Meanwhile, Termini Imerese Public Prosecutor's Office investigators were acquiring evidence for their criminal investigation, which they opened immediately after the tragedy despite no formal suspects having been publicly identified.

Questions have abounded about what caused the superyacht, built in 2008 by Italian shipyard Perini Navi, to rapidly sink, when the nearby Sir Robert Baden Powell sailboat was largely spared and managed to rescue the survivors.

Giovanni Costantino, head of The Italian Sea Group, which owns the ship maker, blamed human error for the disaster, which he said took 16 minutes. “The ship sank because it took on water. From where, the investigators will say,” he told RAI state television after he met with prosecutors.

Costantino cited AIS ship tracking data which he said showed the Bayesian had taken on water for four minutes when a sudden gust of wind flipped it and it continued taking on water. The ship straightened up slightly and then went down, he said.

But was it merely the case of a freak waterspout that knocked the ship to its side and allowed water to pour in through open hatches? What was the position of the keel, which on a large sailboat like the Bayesian might have been retractable to allow it to enter shallower ports?

“There’s a lot of uncertainty as to whether it had a lifting keel and whether it might have been up,” said Jean-Baptiste Souppez, a fellow of the Royal Institute of Naval Architects and the editor of the Journal of Sailing Technology. “But if it had, then that would reduce the amount of stability that the vessel had, and therefore made it easier for it to roll over on its side,” he said in an interview.

The captain of the sailboat that rescued survivors said his craft sustained minimal damage — the frame of a sun awning broke — even with winds that he estimated reached 12 on the Beaufort wind scale, which is the highest hurricane-strength force on the scale.

He said he had remained anchored with his engines running to try to maintain the ship’s position as the forecast storm rolled in.

“Another possibility is to heave anchor before the storm and to run downwind at open sea,” Karsten Borner said in a text message. But he said that might not have been possible for the Bayesian, given its trademark 75-meter (246-foot) tall mast.

“If there was a stability problem, caused by the extremely tall mast, it would not have been better at open sea,” he said.

Yachts like the Bayesian are required to have watertight, sub-compartments that are specifically designed to prevent a rapid, catastrophic sinking even when some parts fill with water.

The underwater search continued in dangerous and time-consuming conditions. Because of the wreck’s depth, which requires special precautions, divers working in pairs could only spend about 12 minutes at a time searching, though reinforcements outfitted with special equipment to enable longer dives were on the wreck Wednesday.

In all, some 27 divers took rotations, including four who helped with recovery after the 2012 Costa Concordia disaster off Tuscany. They called the Porticello wreck a “little Concordia,” fire crews said in a statement.

The limited dive time was aimed in part at avoiding decompression sickness, also known as the “bends,” which can occur when divers stay underwater for long periods and ascend too quickly, allowing nitrogen gas dissolved in the blood to form bubbles.

“The longer you stay, the slower your ascent has to be,” said Simon Rogerson, the editor of SCUBA magazine. He said the tight turnaround time suggested the operation's managers were trying to limit the risks and recovery time after each dive.

“It sounds like they’re operating essentially on no decompression or very tight decompression, or they’re being extremely conservative,” he said.

Divers were also working with debris floating around them, limited visibility and air tanks on their backs.

“We are trying to advance in tight spaces, but any single thing slows us down,” said Luca Cari, spokesman for the fire rescue service. “An electric panel could set us back for five hours. These aren’t normal conditions. We’re at the limit of possibility.”

Winfield reported from Rome and Kirka from London. Associated Press journalists Trisha Thomas in Rome; Andrea Rosa in Porticello; and Anika Kentish in St. John’s, Antigua, contributed to this report.

This story has been corrected to reflect that Thomas was born in Canada, not Antigua.

Spinach And Artichoke Zucchini Boat Recipe

4 stuffed zucchini boats

Zucchini is one of those vegetables that can be so many things to so many people. We see it grated in zucchini bread, spiralized with marinara, fried with dip, or diced up in a salad. Today we're featuring it as a delicious vessel for a mouthwatering spinach and artichoke filling.

When the seasoned boats are roasted, their natural sweetness comes out as they caramelize in the oven. The filling of soft cream cheese and tangy feta mixed with sun-dried tomatoes, artichokes, and chopped spinach provides the perfect example of how combining simple ingredients can elevate a dish to new heights. These stuffed zucchini boats make the perfect light dinner paired with soup, or a scrumptious side dish with just about any entree.

Wellness coach and recipe developer Miriam Hahn brings us this recipe and says, "I love using basic everyday vegetables in new and creative ways, especially when they are in season and plentiful. At first glance, this recipe might look complicated, but it's actually very easy and only a few tools are needed."

Gather the ingredients for spinach and artichoke zucchini boats

recipe ingredients

To make this recipe, start in the produce aisle and pick up zucchini, garlic, spinach, lemon, chives, and optional parsley. When choosing the zucchini, look for large, straight ones, so that they are easy to work with in terms of cutting out the zucchini flesh and stuffing.

Then grab some marinated artichoke hearts and marinated sun-dried tomatoes. The marinated versions will add a lot of flavor to the filling and this will save the step of seasoning those separately.

Hit up the dairy section of the store for mayonnaise, cream cheese, and feta cheese. Of course, if you want to make this recipe vegan, just go for dairy-free versions of these. Lastly, you'll need olive oil, salt, and pepper.

Step 1: Preheat the oven

oven set to 400F

  • Preheat oven to 400 F.

Step 2: Season and roast the zucchini

hand adding pepper to zucchini

  • Place the zucchini cut side up on the baking sheet and drizzle with 1 tablespoon olive oil, ½ teaspoon salt, and ¼ teaspoon pepper. Roast for 20 minutes and cool for 15 minutes.

Step 3: Add oil to a pan

hand adding oil to a pan

  • Add the remaining oil to a medium frying pan and bring the heat to medium.

Step 4: Add spinach and artichoke hearts

hand stirring ingredients in pan

  • Add the garlic, chopped artichoke hearts, and spinach to a frying pan and cook for 10 minutes until the spinach is completely wilted.

Step 5: Add cheeses and sun-dried tomatoes

hand adding cream cheese

  • To the pan add the remaining salt, remaining pepper, lemon juice, mayonnaise, cream cheese, feta cheese, and sun-dried tomatoes. Stir and cook for 3 minutes.

Step 6: Scoop out the zucchini flesh

hand cutting into the zucchini

  • Use a paring knife to cut a ¼-inch thick rim around each zucchini half, then scoop out the flesh. Save the zucchini flesh for another use.

Step 7: Stuff the zucchinis

hand stuffing zucchini with mixture

  • Stuff the artichoke spinach mixture into the hollowed-out zucchini and put it back into the oven for 10 minutes.

Step 8: Garnish and serve the zucchini boats

tray of zucchini boats

  • Top with chopped chives and optional parsley and serve.

  • 4 zucchinis, sliced in half lengthwise
  • 2 tablespoons olive oil, divided
  • 1 teaspoon salt, divided
  • ½ teaspoon pepper, divided
  • 2 garlic cloves, minced
  • 1 (12-ounce) jar marinated artichoke hearts, chopped
  • 2 cups finely-chopped spinach, stems discarded
  • ½ lemon, juiced
  • 2 tablespoons mayonnaise
  • 4 ounces cream cheese, softened
  • ¼ cup feta cheese
  • ¼ cup marinated and sliced sun-dried tomatoes
  • 2 tablespoon chopped chives
  • chopped parsley

What can I use the leftover zucchini flesh for?

close up of zucchini boats

There are many ways to use the leftover zucchini flesh that you remove to make the zucchini boats. It can be added to soup for extra thickness and nutrition. If you are making Minestrone soup, the zucchini will be a perfect addition. If you opt for any blended soup, you can add the zucchini flesh to the blender when you add the other ingredients for extra smoothness.

Add the zucchini to stuffed peppers by mixing it in with the rice, ground beef, or a bean mixture before stuffing the peppers. Other entrees like pasta dishes can easily incorporate zucchini. Try it in a vegetable lasagna, pasta primavera, or baked ziti.

Sauces are another great way to use up the zucchini. Blend it into marinara sauce, romesco sauce , or pesto. You won't taste the neutral zucchini, but you'll get the added benefits of the nutrients. The zucchini also lends itself to any type of breakfast omelet, frittata, or tofu scramble. Just add it when you add the eggs, tofu, cheese, herbs, and other ingredients.

What pairs well with the zucchini boats?

zucchini boats in casserole dish

If you want the zucchini boats to serve as your entree, they pair well with a bowl of soup. Consider tomato basil, lentil soup, roasted red pepper soup, minestrone, or chicken noodle soup. A salad also works nicely with the boats. Anything from a simple green salad to something fancier like a Caesar salad, Caprese salad , or a Greek salad. For heartier options, try a salad with a grain like a spring vegetable and herb grain salad , a black bean quinoa salad, or a farro and roasted beet salad. Serving some warm crusty bread is a nice accompaniment with the zucchini boats and soup or salad.

If you plan to serve the boats with an entree as a side dish, they go nicely with grilled chicken breast, chicken piccata , herb-crusted tilapia, shrimp scampi , pork tenderloin, or flank steak. The boats also lend themselves to a variety of pasta dishes like lasagna, pasta primavera, fettuccini alfredo, or spicy penne pasta. For dessert, a classic tiramisu, fresh berries, or lemon cake all finish the meal off deliciously.

Boat owner has bad day when truck, trailer wind up in Puget Sound waters

A boat owner watched as his truck and trailer rolled into Puget Sound waters Friday morning, the Thurston County Sheriff’s Office posted on social media.

About 7 a.m., the Thurston County Dive Rescue team was dispatched to Boston Harbor marina, north of Olympia on the east side of Budd Inlet.

“The owner was able to swim back to shore; however, the truck posed a risk to other watercraft and environmental hazards,” the Sheriff’s Office said in its social media post. “The dive team was able to recover the truck and trailer from the marina.”

The driver of the truck had forgotten to put it in park when he exited and it rolled down the ramp into the water, Sheriff’s Office Lt. Mike Brooks said Sunday.

'First one to help anybody': Missouri man drowns after rescuing 2 people in lake

He managed to rescue the two who fell overboard, but currents pulled him away from the boat..

Portrait of Julia Gomez

A Missouri man drowned after jumping in the water to save his girlfriend's 5-year-old son, according to local reports.

David Moore, 66, from St. Joseph, Missouri, died Aug. 17 after he jumped into the water when the boy, who was wearing a life vest, began to float away from the boat. Another person who was not wearing a life vest also fell into the water, KQ2 ABC and KCTV 5 reported.

Moore was also not wearing a vest when he jumped in.

The two people fell off a pontoon boat on Smithville Lake, about 30 miles north of Kansas City.

Moore was able to rescue the two people and get them back on the boat, but the current pulled him away from the boat, causing him to drown. The other two people survived.

His head went underwater three times before he disappeared. The Missouri State Highway Patrol later found Moore's body, reports KCTV 5.

David Moore 'spent a lifetime' helping others

"David lost his life helping others out and wouldn't have had it end any other way," according to a GoFundMe that was put together to help raise money for funeral costs.

The GoFundMe raised around $100, but was later deactivated by the organizer, Jeff Penland.

“He would be the first one to help anybody,” Moore's childhood friend William “Bill” Penland told KCTV.

Police and Moore's family are urging people to wear their life vests on the water.
